Recipe : Tuscan Soup

Tuscan Soup also known as Ribollita, is a type of soup i dont even know where isit from. Tuscan i supposed? Hehehe. I came across this recipe from and it sounds easy and fast so i decided to just give it a try.

  1. 1 Onion, peeled and chopped
  2. 3 Potatoes, cubed
  3. 1 Chorizo
  4. Spinach or any suitable vegetables
  5. 2 cans of chicken broth
  6. 1/2 canned of evaporated milk
  7. Pinch of salt & Pepper to taste
  8. Butter
  1. Diced your onion, potatoes and chorizo
  2. Pan fried the chorizo with a nob of butter until fragrant
  3. Add in onions and sautéed until slightly brown
  4. Add in the cubed potatoes
  5. Add in the chicken broth and let it shimmer.
  6. Add in some water if you think it is necessary
  7. Turn to low fire and boil until the potatoes are soften
  8. Add in some salt and pepper to taste
  9. Grab a handful of vegetables/spinach and let it boil for a minute or two
  10. Turn off the heat, scoop the soup out
  11. Add in evaporated milk to your taste

DSC036476.) Cook until the potatoes are soft, add in salt and pepper to taste. Add in the vegetables you like

I personally love it milky. So i add in more evaporated milk to make it creamier. Hehehehe! Hope you enjoy it 🙂
